I'm Cheating

So, I've already missed a couple of night's-worth of recipes ... not a good start for the New Year I suppose! Tonight's dinner was "easy peazy lemon squeazy" according to my eldest, Nita. Do you have your pen and paper ready to go? Here it is:

Step One
Go to the grocery

Step Tw0
Buy a pre-cooked rotisserie chicken (We've found the best ones at Sam's for only 5 bucks)

Step Three
Eat it!

That's how easy dinner was tonight! We do like making a variety of recipes with the rotisserie chickens though! You can find many of them here:

Philadelphia Chicken Enchiladas Recipe #183925

Yummy, cheesy enchiladas and my husbands favorite! Need a safe place to store it! by Chef #268179 35 min 15 min prep SERVES 4 -6

2 cups chopped cooked chicken or cooked turkey

1 cup chopped green bell pepper

1 (8 ounce) package cream cheese cubed

8 ounces salsa divided

8 (6 inch) flour tortillas

3/4 lb Velveeta Cheese cut up

1/4 cup milk

Stir chicken, bell pepper, cream cheese, and 1/2 cup salsa in saucepan on low heat until cream cheese is melted.

Spoon 1/3 cup chicken mixture down center of each tortilla; roll up.

Place seam side down in a lightly greased 12X8 inch baking dish.
Stir Velveeta ( I use Aldi brand)and 1/4 cup milk in saucepan on low heat until cheese is melted.

Pour sauce over tortillas; cover with foil which has been lightly sprayed on the underside with non-stick spray.

Bake at 350 degrees for 20 minutes or until thoroughly heated.

Pour remaining salsa over the top.

I serve with sour cream, extra salsa, and tortilla chips. The prep time is an estimate; if you keep precooked, chopped chicken on hand the prep time is next to nothing.

Update alert:

I had my surgery (minor kidney related surgery ... not the big one we were hoping for) on Thursday afternoon. The sleep was lovely! I am always amazed at the great nursing staff at MoBap. I actually enjoy the socializing before and after the procedure. I was actually belly laughing with the anesthesia nurse as I was going under! Fortunately, all looked well to my urologist/oncologist. He really lifted my hopes with positive discussions about how he wants to "get in there and repair the scar tissue" from a surgery performed back in the mid '70s on my kidneys after I "beat the crap out of cancer." I've been really down this last month, fearing that the end for me was near; however, being surrounded by such positive folks and a great family has brought me out of my funk and made me realize I still have a lot of living to do!

This afternoon we got together with Dad, Kristie, Eric and little Christopher to celebrate Brandon's and Anita's birthdays! Brandon turned 4 on the 7th and Nita will be, get this, 13 on the 12th! I am going to be the mother of a, gulp, teenager! I tried to take a few pics to share with you. Enjoy!
