Project 2010 Officially Begins! Tuna Souffle


Oddly enough, I actually started a project and made it through my first day feeling like something good was going to happen.

Last night, the kids and I created a dish from my mother's recipe for "Tuna Souffle". YUMMMY! We almost forgot to take a picture of the dish before we consumed the last bite! Below you will see what the final product looks like, along with Mom's recipe. Sorry Dad, no leftovers!

Tuna Souffle

2 cups milk
5 T. flour
4 T. butter (melted)
1/4 tsp. salt
1 tsp. sugar
2 eggs, beaten
1 small can of tuna
juice of one lemon
1/4 cup chopped parsley
1/4 cup chopped onion
2 T. pimento
1/2 cup plain bread crumbs


Prepare the white sauce by whisking milk, flour, and butter in a mixing bowl
Add seasonings and eggs. Drain tuna then add lemon juice to tuna: add to
the above mixture. Add parsley, chopped onions and pimento ... stir.
Put ingredients in a greased corning ware cooking dish (8X8 or similarly sized dish.)
Sprinkle bread crumbs over mixture.
Bake at 375 degrees for about 50 minutes or until set.
This is a delicious Spring meal, or in our case, a light meal when it's 10 degrees
outside and we wished it was Spring outside! Enjoy!
